Lime Chicken and Mandarin Orange Spinach Salad

Salad holds a special place for most people. A place where no one wants to go for dinner.

But a properly prepared, less traditional salad can surprise and amaze even the biggest skeptic.

The proper way to make a salad is use ingredients so fresh and delicious that you don’t need to use a dressing. You end up with a more refreshing and satisfying meal.

Ingredients for this Spinach Salad

  • Two boneless, skinless chicken breasts
  • Three fresh limes
  • Five mandarin oranges
  • Lots and lots of spinach
  • Garlic

How to Make a Lime Chicken and Mandarin Orange Spinach Salad

Finely chop several garlic cloves. Also, prepare your limes for squeezing as much juice as possible out of them. Peel and separate the orange sections.

Throw your chicken in a frying pan and on the stove at medium heat. Once the outside begins cooking over, throw on your finely chopped garlic and the juice from your first lime.

Butterfly your chicken, continue cooking, and throw on the juice from your second lime. By the time your chicken is finished, it will have absorbed much of the lime juice.

Chop the chicken into small pieces and then put lots and lots of spinach in a large bowl.

Throw your chicken, oranges and remaining lime juice on top and show off your seemingly gourmet meal. Mandarin oranges and spinach in salad make people think meals are at least four times as classy.

Salad Preparation Tips

Butterflying your chicken gives you more manageable pieces and should pretty much always be done for salads.

Chicken does a great job of absorbing the citrus flavor of the limes and will work great as a dressing substitute when added to the mandarin oranges.

If you’re extremely anti-spinach, you can use fresh romaine lettuce.
